Cucumber and Celery Slaw with Asian Dressing



Perfect with Korean Beef or as a standalone.


Supplies:

  • English cucumber

  • celery

  • carrots, if desired

Asian Dressing:

  • 1/4 teaspoon of black pepper

  • 4 teaspoons of salt

  • 1 Tablespoon of dijon mustard

  • 4 Tablespoons of sugar (or sugar substitute)

  • 1 Tablespoon of toasted sesame seeds

  • 1 teaspoon of sesame seed oil

  • 1 cup of canola or light flavor olive oil

  • 7 oz of vinegar (just shy of a cup)

Instructions:

  1. In a small bowl, whisk together Asian Dressing: pepper, salt, dijon, sugar, sesame seeds, sesame oil, oil, and vinegar.

  2. Set aside to let incorporate.

  3. Quarter and slice cucumber into bite-size pieces. Slice celery into bite-size pieces. Cut carrots into thin slices.

  4. Pour the Asian Dressing over the cucumbers, celery, and carrots. Mix together well.

  5. Let sit for 20 minutes to let the dressing's flavor absorb into the vegetables.

  6. Mix one last time and serve. Enjoy!
