Family Favorite: Korean Beef (Keto Friendly)

This recipe was recommended to us by my sister who got it from my brother, who found it here. That practically makes it a family recipe, right!?! I have since adapted it to fit our family, the pantry supplies we have on hand, and dietary restrictions. So here we go:

Supplies:

  • 1 pound ground beef

  • broccoli or other desired vegetable

Marinade mix:

  • 1/4 cup sugar substitute (1:1 sugar substitute as pictured) for our Keto diet family members

  • 1/4 cup reduced-sodium soy sauce

  • 2 teaspoons sesame oil

  • 1/2 teaspoon crushed red pepper flakes

  • 1/4 teaspoon powdered ginger

  • 1 tablespoon light flavor olive oil

  • 3 cloves garlic, minced

  • 2 tablespoons of dried onions

  • 1/4 teaspoon sesame seeds

* If your family is a full sugar crew, replace the sugar substitute with 1/4 cup brown sugar, packed.

** I double this recipe for our larger than average-sized family.

Instructions:

  1. Brown ground beef to a nice crumble and drain fat from it.

  2. Steam broccoli.

  3. In a small bowl, whisk together sugar substitute, soy sauce, olive oil, sesame oil, minced garlic, red pepper flakes, ginger, and sesame seeds.

  4. Stir in soy sauce mixture until well combined. Allow to simmer until heated through, about 2 minutes.

  5. Add steamed broccoli and let simmer for an additional 5 minutes.

  6. Serve immediately, with a Cucumber and Celery Slaw with Asian Dressing* or with rice, for the non-Keto family members.
